Baked Potato Bruschetta

Here's what you need:

1 French baguette (16 inches long)

1/4 cup of mayonnaise

1/4 cup of sour cream

4oz of shredded Monterey Jack Cheese

4 chopped green onions

4 slices of bacon (chopped into small pieces)

1/4 teaspoon of salt

1/2 teaspoon of black pepper

Here's what you do:

Pre-heat the oven to 400 degrees. Line a baking sheet with foil and set aside.

Fry the bacon until done. Drain fat. Cool and crumble and set aside.

Slice the baguette in half lengthwise and place on the baking sheet.

In a mixing bowl, mix the mayo, and sour cream until smooth. Then mix in the cheese, chopped green onion, bacon pieces, salt and pepper.

Spread the mixture evenly over each baguette half.

Bake in the oven for 10 to 15 minutes until the bread is crisp and the topping is hot and bubbly. Let it cool a little bit before you enjoy!
