

Here's what you need:
1 pound of beef sirloin (cut into thin slices)
1 can of diced tomatoes (14.5oz can, undrained)
2 teaspoons of vegetable oil
1 tablespoon of brown sugar
3 tablespoons of soy sauce
4 teaspoons of cornstarch
8 oz. of uncooked egg noodles
1 cup of orange juice
1 teaspoon of ground ginger
2 cups of frozen (thawed) or fresh snow peas with the end trimmed
Here's what you do:
Cook the package of egg noodles according to the directions on the package.
Slice the sirloin steak into small strips.

In a small bowl, beat together the orange juice, soy sauce, cornstarch, brown sugar and ginger. Use a wire whisk until it is all blended.

Heat the vegetable oil in a large skillet or wok. Using medium-high heat get the skillet hot for 1 minute. Add the steak and cook for 3 minutes or until the meat is no longer pink, stirring frequently. Remove from the skillet or wok and cover, then set aside.

In the same skillet, add the tomatoes with their liquid and the orange juice mixture and bring to a boil. Stir in the snow peas, then reduce the heat to low and simmer until the snow peas are crisp but tender, stirring constantly. Add the steak back to the snow peas and cook for another two minutes.
Drain the noodles, and place on a serving platter (or individual plates). Top with the steak and snow peas!
