Beef Dijon
Recipe

(for one)
3 1/2 to 5 1/2 oz beef flank steak
1 tsp whole black pepper
1 cup fresh mushrooms (sliced)
5 green onions, thinly sliced
1/4 cup water
1/2 packet low sodium beef broth
4 oz non-fat plain yogurt
1 Tbls flour
2 tsp Dijon style mustard
1 cup fresh aparagus spears
1. Rub black pepper on both sides of the steak.
2. Broil steak 3-inches from heat for 6 minutes. Turn steak over and brown for 6-8 minutes longer.
3. Combine mushrooms, green onions, water and beef bouillon; cook until mushrooms are tender.
4. Mix yogurt, flour and mustard. Stir into mushroom mixture. Cool and stir until thickened.
5. Cook asaragus
Slice steak thinly. Arrange steak slices and asaragus on dinner plate. Serve with sauce.
