For the Guacamole-Shrimp Cups, just use Tostitos Bakes Scoops tortilla chips, and fill with a spoonful of good quality guacamole (use the real stuff if possible, and stay away from the stuff with salsa, since that will make it too runny). Top with one cooked shrimp.
For the Pumpkin Bread finger sandwiches, cut circles with a bicuit or cookie cutter in your slices of Pumpkin Bread (or gingerbread, or ANY kind of sweet bread). Mix a block of Neufchatel Cream Cheese (this seems to cream up better) with ginger preserves to taste. Spread the cream cheese mixture between two circles of Pumpkin bread.
For the Pumpkin Bread Trifle, take your leftover pumpkin bread from the sandwiches, and layer in a glass with vanilla pudding. Here's a tip... use two packages of regular store brand instant pudding and make as directed. Mix one block of Neufchatel cream cheese until smooth and blend in one teaspoon of vanilla. Fold this into the prepared vanilla pudding. You will never know this is instant pudding!
