Tomato Basil Turkey Wraps

Always use fresh ingredients!






Today's recipe:
Ingredients
1/4 cup grated Parmesan cheese (plus some for sprinkling)
1/4 tsp Italian seasoning
1/4 tsp salt
1/4 tsp freshly ground black pepper
1 lb turkey cutlets
1/2 cup fresh basil, julienne-cut
2 Roma tomatoes, seeded and julienne cut
Olive oil cooking spray, as needed
In small bowl combine cheese, Italian seasoning, salt and pepper. Sprinkle mixture evenly over one side of cutlets and top with basil. Divide tomatoes equally over cutlets. Roll cutlets up, jelly-roll style, to encase tomato and basil mixture. Spray each bundle with olive oil and coat with bread crumbs.
Place bundles, seam side down, on (14 x 9 x 1 inch) baking sheet sprayed with olive oil. Bake at 375 degrees F for 20 to 25 minutes
