Dustin's "Summ-herb"time Chicken
(see recipe below)







Dustin's
"Summ-herb"time Chicken (Serves 2)
2 Boneless Skinless Chicken Breasts
2 tablespoons of oil (Olive, Soy or Peanut)
1/2 lime
2 teaspoons of finely grated ginger
3 tablespoons of chicken broth (low sodium is better)
Salt and Pepper
1/4 cup of packed of torn basil leaves
2 tablespoons of torn fresh mint leaves.
Put the oil in a medium skillet over medium high heat. Salt and Pepper both
sides of the chicken breasts and cook them. Turn them once. About 5 minutes
each side.
Remove
the chicken from the skillet. Pour in the chicken broth, squeeze 1/2 lime
juice and add the ginger to the skillet. Bring to a boil. Take off the heat,
then add the basil and mint. Mix with a spoon. (Dustin's quick tip: microwave
the lime for about 10-15 seconds to get more juice out of it!)
Put the chicken on the plates, spoon the sauce on the chicken and enjoy!
