Italian Chicken
(see recipe below)


Italian Chicken (Serves 4)

4 boneless, skinless chicken breasts
1 or 2 eggs, beaten
1 cup of bread crumbs, cracker crumbs...(or cushed Cheez-its - the white cheddar version)
1/2 cup olive oil
2 cups of pizza sauce. I used the roasted tomato spaghetti sauce from HEB
1 to 2 cups of grated Parmesan cheese
Slices of mozzarella cheese.


Preheat the oven to 350 degrees.
In a plasic bag, using a meat mallet, pound the chicken breasts into 1/4 inch thickness.
Set the chicken breasts in the egg yolks then cover with the bread crumbs.
Heat the olive oil in a skillet, then add the chicken breasts and cook until golden brown on both sides.
Once they are brown, remove from the heat and drain.

Put the chicken breasts into a baking dish and cover with the pizza sauce, then top with the parmesan cheese.

Bake in the oven for 30 minutes,

Top with the mozzarella cheese slices, then bake an additional 10 minutes.
