Red and Green Tilapia









Tilapia Filets
(two)
1 Tbs. Olive Oil
1/2 tsp. Red Pepper Flakes
Baby Spinach
Asparagus tips (10 to 12)
Scallions (2)
Lime (1/2)
Salt and Pepper (to taste)
Foil
Here's how to do it:
Pre-heat the oven to 450 degrees
In a small bowl mix together 1 tablespoon of olive oil and 1/2 teaspoon of red
pepper flakes. Microwave for 30 seconds to make the chile oil.
Take two sheets of foil and flatten out on the counter. Place an equal amount
of spinach in the middle of both pieces of foil. Also put the asparagus tips
on top of the spinach.
Place the tilapia filets on the top of the spinach and asparagus. Top each piece
with the chopped scallions and the oil with red pepper. Cut the lime in half
and squeeze the lime juice on top of the fillets. Season with salt and pepper
and seal the foil. Seal at the top and sides and it will steam the filets as
well as bake them.
Place in the oven for about 10 to 12 minutes.
Serve with rice or a ceasar salad.
