Apricot Grilled Shrimp

The Recipe:
Here's what you need:
2 pounds of large shrimp
1 cup of apricot preserves
1 lemon
2 cloves of garlic (minced)
4 teaspoons of soy sauce
2 teaspoons of grated ginger
1 teaspoon of black pepper
In a medium microwave safe bowl, heat the apricot preserves for about 30 seconds
until melted.
Grate the lemon rind (about 2 teaspoons) and add to the bowl. Cut the lemon
in half, and squeeze about 2 tablepoons into the bowl. Mix in the soy sauce,
ginger, garlic and black pepper. Add the shrimp, making sure they are cleaned,
deveined and peeled. Toss the shrimp and coat. Cover and refrigerate for at
least 30 minutes.
Put nonstick spray on the grill or broiler pan. Remove the shrimp and place
on the grill or pan. Set aside the marinade. Grill about 4 inches from the
heat, about 4 minutes per side. Continue basting the shrimp with the marinade.
In a medium sauce pan, heat the remaining marinade until it bubbles. You can
use this as a dipping sauce.
