Today's recipe:
Dishwasher Steamed Salmon
(no, really!) with Cilantro Cream Sauce
Take a medium sized sheet of aluminum foil, and generously oil with olive
oil. Place salmon on top of oil and add salt and pepper to taste. Cover with
another sheet of foil, and fold over edges as shown above. Place the packet
in the top rack of your dishwasher (also as seen above) and set the washer
for regular wash. (NO soap in the dishwasher please!)
This should take 30 to 40 minutes. While the salmon is "cooking", finely chop the white part of one leek, two cloves of garlic, one jalepeno and a small shallot. Saute all of the chopped items in butter in a small saucepan.
Once this has become translucent, add 1 ½ cups of chicken stock and let simmer uncovered for about 10 minutes. Take off the heat and let cool for a few minutes.
In a seperate bowl add two cups of fresh cilantro leaves. Pour the cooled veggie mix over the cilantro leaves, then add 2 teaspoons of lime juice and salt and pepper to taste. Blend together (use your food processor or hand held mixer). When completely cool, blend in two tablespoons of sour cream.
